If you’re looking for bold flavor and a steak that truly stands out, picanha is hard to beat. Known for its rich taste and signature fat cap, this cut delivers incredible tenderness when cooked right.

Simple, flavorful, and perfect for any night of the week—this is one of our favorite ways to prepare it.

Ingredients

  • 1–2 lbs Lazy 3X Ranch picanha steak
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 3–4 cloves garlic, smashed
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

1. Prep the Steak

Pat the picanha dry and slice into thick steaks (about 1–1.5 inches), cutting with the grain. Season generously with salt and pepper.

2. Heat the Pan

Heat a cast iron skillet over medium-high heat until hot. Add olive oil.

3. Sear

Place steaks in the pan, fat side down first if possible. Sear for 3–4 minutes per side until a nice crust forms.

4. Add Butter & Garlic

Lower heat slightly and add butter and garlic. Spoon the melted butter over the steaks for 1–2 minutes.

5. Rest

Remove from heat and let rest for 5–10 minutes.

6. Slice & Serve

Slice against the grain for maximum tenderness. Serve and enjoy.

Tips for the Best Picanha

  • Don’t skip the rest time—it keeps the steak juicy
  • Always slice against the grain before serving
  • Medium-rare is the sweet spot for this cut
