There’s nothing better than a simple, slow-cooked meal that fills the house with incredible flavor. This leg of lamb recipe is easy to prep, slow-cooked to perfection, and perfect for a cozy family dinner.
Ingredients
- 1 Lazy 3X Ranch leg of lamb
- 1 lb baby potatoes (halved)
- 3–4 carrots, peeled and cut into chunks
- ½ head cabbage, cut into wedges
- 1 onion, sliced
Seasoning & Liquid:
- 3 cloves garlic, minced
- 2 cups beef or chicken broth
- 2 tbsp olive oil
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 1 tsp thyme
- 1 tsp salt
- 1 tsp black pepper
Instructions
1. Prep the Lamb
Pat the leg of lamb dry and rub with olive oil, garlic, rosemary, thyme, salt, and pepper.
2. Layer the Vegetables
Place potatoes, carrots, onion, and cabbage in the bottom of the slow cooker.
3. Add the Lamb
Set the seasoned leg of lamb on top of the vegetables.
4. Add Liquid
Pour broth around the lamb (not directly over the top to keep seasoning in place).
5. Cook Low & Slow
- Cook on low for 8–10 hours
or - Cook on high for 4–6 hours
Until the lamb is tender and easily pulls apart.
6. Rest & Serve
Let the lamb rest for a few minutes before slicing or shredding. Serve with the vegetables and spoon some of the broth over the top.
